And the jury’s still out on that one. I want to like it. I do. I love it as corn bread, I love its dear friend, semolina. But as polenta? I’m still not convinced.

Ok. So now that I’ve laid all my cards on the table, let me tell you more about the recipe that got me to turn my back on my beloved Saturday pancakes.
So you and me, we’re just starting to get to know each other. I tell you something about me, you tell me something about you, and before we know it, we’ve got a THANG going on. A food thang.
Let me tell you something else about me. I make pancakes from scratch. And I bake them up, along with a strong pot of coffee, just about every Saturday morning.
Oh what a sad, sad day this is. All that talk, all that planning, all that WORK. And the result? Bubbling, buttery disaster.
I should have known it wouldn’t work out. Right from the beginning the dough wasn’t coming together as it should.
Maybe competition is the wrong word. I mean, can I really compete with Tim Horton’s? Their top notch donuts, chewy bagels, their quintessential Canadian-ness? A port in any road-trip storm?
I’m going to make a bold statement here, so I hope you’re sitting down:
Yes. I. Can.
