Last night, after an almost three month hiatus, our cooking club reconvened at my house for Dumping Fest. Last month, during Chinese New Year, I went out for a huge Chinese feast and thought, we HAVE to do dumplings for our next cooking club night.
So Valentine’s Day is approaching, and you want to impress your special Mister or Miss. But you’re not the type of couple who wants to fight the crowds at the restaurant and waste all night getting there and getting home.
What do you get when you take a half-opened can of tomatoes, leftover chick peas and wilting spinach?
It’s not easy bein’ cheesy.
Actually it couldn’t be easier.
Make a white sauce, in the microwave to really speed things up, add in some sharp old cheddar (or your favourite cheese or cheeses), and in the time it takes for the pasta to cook, bam!
Cheesy macaroni goodness.
One of the things I love about making food is how I find recipes, how I find inspiration. Maybe inspiration finds me, I’m not sure. What I do know for sure, is that I almost didn’t try these latkes, and that would have been a real shame.
That is the question.
And the jury’s still out on that one. I want to like it. I do. I love it as corn bread, I love its dear friend, semolina. But as polenta? I’m still not convinced.
If my greens look like this, then no problem.
