It’s Not Easy Bein’ Cheesy

It’s not easy bein’ cheesy.

Actually it couldn’t be easier.

Make a white sauce, in the microwave to really speed things up, add in some sharp old cheddar (or your favourite cheese or cheeses), and in the time it takes for the pasta to cook, bam!

Cheesy macaroni goodness.


If you really wanna funk it up, add in some tangy tinned tomatoes (with some extra juice) and top with pepper and ketchup. Or add your own special flavours into the sauce.  Chilli powder for a Southwest vibe! Feeling cultured? How about a titch of Dijon mustard or grated nutmeg?

Sometimes I go balls out with tomatoes and then top the entire mixture with breadcrumbs and parmesan cheese and bake in the oven for a cheesy macaroni casserole.  That’s if I can wait that long to dig in.


The opportunities are endless really. It’s up to you how far you want to go.


Perfection. Perfection in its simplicity. Perfection in how it makes you feel after a cold dark day. Carb loading at its finest. Oh yes, bring on winter if it means more warm filling cheesy meals are on tap.

 

It's Not Easy Bein' Cheesy Homemade Mac n' Cheese

Ingredients
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ tsp salt
  • 1-1½ cups milk--1% is fine and still produces creamy results, or use cream to really push the boat out
  • Shredded old cheddar
  • ¼ can of diced tomatoes (optional)
Instructions
  1. Measure butter into a microwaveable bowl (I use a 2 cup capacity, or larger, Pyrex measuring cup). Microwave on MEDIUM for 60-90 sec. or until melted.
  2. Add flour and salt and mix with a fork until smooth.
  3. Slowly add the milk, a bit at a time, stirring to ensure no lumps form. If they do, use a whisk to work them out.
  4. Microwave on MEDIUM for 5-7 minutes, stopping to stir at 1 minute intervals (this seems like a lot of stirring, but I find it produces the best results. Use your judgement).
  5. Microwave until desired consistency is achieved.
  6. Once the white sauce is made, you can add shredded cheese and mix through, allowing the heat of the sauce to melt the cheese.
  7. If there is still a bit of cheese not yet melted, have faith. While your pasta is cooking, it will finish melting through.
  8. This is also when you would add any special flavourings to your sauce if you like.
  9. When adding tomatoes, I wait until I've added the sauce to the pasta.
