Moving, Craving and Nutella Brownies

As some of you may know, I am knee-deep in packing up my apartment right now, getting ready to move out at the end of the month. Where am I going, you ask? Don’t worry, I’ll tell you all about it on Sunday…

In the meantime, I’m stressed out and my apartment is packed to the rafters with boxes. But even though my life feels like it’s in limbo, it doesn’t mean I suddenly lose my cravings for chocolate. If anything, I crave it more. But I have limited resources and time. My kitchen is mostly packed and I am slowly eating my way through my pantry. Somehow, in the midst of all this chaos, I’ve run out of all types of chocolate that are normally lurking in my cupboards for just such an occasion.

What’s a girl to do?! WAIT! I have Nutella!

Suddenly I remember the cocoa hazelnut spread that we all know and love. And just as I run to find it pushed to the back of my cabinet, it hits me–Make Nutella Brownies!

My mother, who is safely addicted to Pinterest (and I say safely because she doesn’t have an account, she browses from outside the log-in zone) recently found a recipe for Nutella brownies online and was so smitten she jumped onto Google to find the recipe. She raved about how easy they were (only three ingredients!) and how great they tasted (like the best brownies you’ve ever had!).

While I wanted to believe her, I have to admit that part of me was skeptical. Seriously? Three ingredients? Seriously? The best you’ve ever had?

But on this night of chocolate craving meltdown, I reached for the Nutella (almost the entire jar), 2 eggs and the 1/2 cup of flour. I found a handful of chocolate chips (my last handful) and sprinkled them on top as per the recipe. Oh, and I added salt. The recipe said it was optional, but I find it always adds that “something”.

I can’t give salt all the credit, but these definitely did possess that certain je-ne-sais-quoi. Look, I love Nutella, but these really did taste like brownies (especially the batter) and when cooked, the outsides were cakey, and the insides were gooey and almost cheesecakey in texture.

Life changing.

You MUST try these, and with such little effort for such maximum reward, you’d be silly not to. Go on. Do it. I wanna hear ALL about it.

Ingredients
  • 1 cup nutella
  • 2 eggs
  • 10 Tb all purpose flour (or ½ cup plus 2 Tb)
  • ¼ tsp salt (optional)
  • ¼ cup chocolate chips (optional)
Instructions
  1. Preheat oven to 350 degrees F. Line a regular (not a mini) 12 cup muffin tin with paper liners.
  2. Mix together eggs and Nutella in a medium bowl until smooth. Add in flour and mix until just combined.
  3. Evenly spread into prepared muffin cups. Sprinkle each with a few chocolate chips, if desired.
  4. Bake 12 minutes.
  5. If you microwave the Nutella for a few seconds, it will soften it and allow for easier mixing.

    • Oh they certainly did. Just getting into the kitchen to blow off steam, and of course, eat chocolate, always does the trick.
